Mom's Brownie Pudding Recipe

It's like a brownie in chocolate sauce. Somehow it stays separated while cooking. My mom used to make this all the time and my sister has spent the last 2 months searching for the recipe, as Mom used to make it from memory. She sent me this note on Facebook earlier today.

Quote:
I have been craving this since Mom died and could not find the recipe. Anywhere. Not even in Mom's very well loved Joy of Cooking which has so many recipes scrawled on the front and back pages. Then this morning, 2 months after she died, as I was looking through my folder of scribbled down recipes for a different one it fell into my lap.

1 cup flour
3/4 cup sugar
2 tbsp cocoa
2 tsp baking powder
1/2 tsp salt
1 cup milk
2 tbsp oil
1 tsp vanilla
1/4 cup walnuts (optional)
3/4 cup brown sugar
1/2 cup cocoa
1 3/4 cup hot water

Combine the first 5 ingredients. Add milk, oil and vanilla and mix until smooth. Add the walnuts and pour the batter into a casserole dish. Combine the brown sugar, 1/2 cup of cocoa, and hot water. Pour the mixture over the batter. Bake at 350F for 40 min.

So good, you'll want to double it... although make sure you have your math right. Mom "doubled" it once but actually quadrupled it. We ate brownie pudding for 2 weeks Very Happy
