for the topping
6oz flour
3oz butter or margarine
3oz caster sugar
for the filling
3/4 lb of apples
3/4 lb of rhubarb
4oz sugar
juice and grated rind of 1 orange
1 teaspoon of ground ginger
sift flour into a mixing bowl
add butter or marg in pieces and rub into flour until mixture resembles breadcrumbs
mix in sugar
cut apple and rhubarb into pieces and mix together
( I USUALLY PUT APPLES AND RHUBARB INTO A SAUCE PAN AND COOK UNTIL THEY HAVE BECOME A SAUCE AND ADD SUGAR MIXING ALL THE TIME SO AS NOT TO BURN)
you shouldnt need to add water to saucepan as theres plently in fruit but if need be just add a little to start the cooking
pour mixture into deep pie dish
stir in orange juice rind and ground ginger
sprinkle the topping over rhubarb and apple mixture and bake in oven (200c/400f or gas mark 6 for 30mins or until topping is golden brown
or you can just place fruit in to deep pie dish and stir in orange juice rind and ground ginger
sprinkle topping over and bake in oven 200c/400f or gas mark 6 for 30mins or until golen brown
